40 Day Yoga Challenge – Days 13 & 14

I am in so much pain that I want to cry.

Both knees are strapped and I can barely make it down the steps of my apartment.A� The boyfriend has assumed all dog walking duties until further notice.

With a complete inability to do anything physical I turned my attention to my sugar cravings.A� With the boyfriend out at a four hour bootcamp somewhere in the city (mad bastard) I was left to my own devices.A� Al the white chocolate and raspberry cupcakes were gone so I decided that a stocktake was in order.

In the Fridge: left over icing from the cupcakes, left over salted caramel from a previous chocolate brownie recipe (I love the fact that this stuff doesn’t go off!), half a bar of Organic Dark Chocolate (had to taste test this stuff from Aldi – it passed).A� Two bars of Lindt chocolate (they were on sale, two bars for $6, or something like that)

In the pantry: Tinned stuff, dry stuff, half a packet of white chocolate buttons (don’t look too carefully at the use by date), half a packet of cadbury’s chocolate drops……..enough said.

Secret stash (regularly moved to avoid detection by boyfriend): English chocolate of various bars, sizes, flavours.

OH THE DILEMMA!!

Which wolf am I going to feed?A� The one with the insatiable sugar craving, the one that wants me to sit on my arse, put my feet up, put ice packs on my knees and drink cups of tea and watch videos until my boyfriend comes home to look after the invalid that I am.

Or the other one?

Whilst I did spend a lot of time sitting and resting this weekend and I watching movies with my boyfriend, I did not succumb to the chocolate craving at THAT moment – well not exactly…

Another purpose for this blog is to find a healthy brownie.A� And so, rather than reaching for the easy fix, pre-packaged sweetness which is about as far from healthy or wholesome as you can get.A� I chose to create something wholesome from scratch using ingredients that I understood.A� I was also able to reduce my food waste by incorporating left-over roast pumpkin and mashed potato.

Here’s what I learned from the exercise.A� Even though the end result was the same, a cup of tea and a chocolatey treat the journey was very different.A� Instead of opening the fridge, unwrapping a bar of chocolate and eating the whole thing I experienced the following:

Joy – Creating something from scratch is a joyful experience, especially when you know that every ingredient is good for you and the end result is going to be a chocolate brownie!

Anticipation – How exciting is it to have something sweet baking in the oven.A� At first you’re not sure if you’ve actually smelled the chocolate in the oven, is a figment of your imagination?A� But slowly and surely the aroma begins to build until your entire apartment begins to smell heavenly.A� I really believe that the smell of baking has the power to transform a house into a home.

Pride – Yes, I admit it.A� I felt proud!A� When the boyfriend came home, there was a tray of chocolate brownies waiting for him (minus the piece that I had tested before he came home!).A� We sat and watched movies for the rest of the weekend and yes I was pampered for the entire time!

Healthy Brownie – Sweet Potato & Ginger

My first stop on the list of “26 Chocolaty Paleo Brownies without Flour or Dairy canadian pharmacy valtrex http://wdsgym.com/alli-costco purchase lotensin benazepril ” was number 16, Sweet Potato Ginger Brownies. The main reason being that I had all of the ingredients in the kitchen. Nothing kills the creativity mojo faster than having to ‘pop out’ to the shops to get something that I’m missing. It’s one of my pet hates.

After reading all the reviews at the bottom of this particular blog post, I had some pretty high expectations. A�Actually, more like VERY high expectations!

…and they go on and on. Having read these reviews I got pretty excited. I gathered together the ingredients, followed the instructions and poured the batter into the tin and then popped it in the oven at the required temperature for the required time.

I’ll confess up front. I was dubious before the batter went into the oven. I felt that the ginger was over powering and I’m not sure that I like the honey being used as a sweetener. That said, I like to wait until the finished product comes out and cools before I make a final judgement.

The alarm pinged and out the brownies came. The colour was more orange/red than the dark chocolatey brown I would expect from a brownie. Granted, the recipe calls for sweet potato which is orange in colour, but I was staring at something that resembled a ginger bread both in colour and smell.

Now, when it comes to texture, I am a funny creature. A close inspection of the brownie revealed a baked eggy frittata texture that realised quite a bit of water when cut or pressed. I prefer a fudgy, sticky, cake like texture. I thought perhaps it was undercooked but biting into a piece proved me wrong. It was similar to biting into a sweet flavoured omelette. All wrong.

Taste wise and things weren’t much better; not chocolatey enough, too gingery and too spicey (nutmeg overload). Overall? It’s a big thumbs down from me. In fact, I only ate one piece and my boyfriend ate the rest. It’s a chocolate brownie……and I gave it away! Enough said!

I like to give everyone a second chance, so I had another go with a few tweaks here and there and I must say, I am much happier with the result.A� I’m still not sure that I like the honey as a sweetener so next time I might replace all the honey with Stevia or try Agave syrup.

Ingredients:
2 cups mashed sweet potato (for this version I used a mix of leftovers; sweet potato, pumpkin and plain old mashed potato!)
2 eggs
1/4 cup coconut oil
1/4 cup organic honey
3 tablespoons coconut flour
4 tablespoons cocoa powder A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A� A�A�A�A�A�A�A�A�A�A�A�A�A�A�A�A� 2 tablespoons Stevia
1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon cream of tartare
pinch of salt
1/2 cup dark chocolate chips (optional)

Method:
1. Preheat your oven to 180 degrees Celsius.
2. Grease a brownie tin and line with baking paper.
3. Place your mashed spuds/pumpkin in a bowl and add eggs, oil, honey and vanilla. Mix well.
4. Add coconut flour, cocoa powder, cinnamon, ginger, nutmeg, baking powder, cream of tartare and salt. Mix until well blended.
5. If using dark chocolate chips, add them now and mix by hand.
6. Pour the batter into the prepared pan and spread evenly. My batter was quite stodgy so it didn’t exactly ‘pour’ into the pan.
7. Place in the preheated oven and bake for 35-45 minutes or until a toothpick inserted in the centre comes out clean.

A Healthy Brownie – Why? (Reason 2)

Perhaps I’m just really lucky but I have the digestive system of an Indian street dog.A� I can seriously eat anything; cheese with green fur coat? Cut it off – it’s perfectly fine underneath (especially if you eat it with marmite!), bread with green spots? Pluck ’em out, toast it and add marmite.

I thank my parents for this.A� After every meal, all the leftovers would be dutifully placed in tupperware containers and stored in the fridge.A� Every fortnight (sometimes longer), Dad would make one of his curries.A� These curries are a family favourite.A� Each one is unique, specially crafted from the contents of those tupperware tubs.A� Basic rule of thumb, if it’s not furry it goes in the Balti pan.A� Then add spices, plenty of chilli and serve with rice and poppadoms.A� Yummy!

I’m not sure how many doses of penicillin would be in one of those curries but I never suffered food poisoning or gastroenteritis, until I left home and lived with a boyfriend who never ate anything that was approaching it’s ‘use by date’.A� Take from that what you will!

Fast forward a number of years and I now have a collection of friends with various different ‘food sensitivities’.A� Irritable Bowel Syndrome (IBS), Celiac, lactose intolerant and so on.A� So reason number 2 is my friends.A� Why should anyone have to miss out on the delight of biting into a freshly baked chocolate brownie?

I figured that I like baking brownies, I like eating brownies and I like sharing a cup of tea and a sweet treat with my friends.A� It really is a no brainer!

A Healthy Brownie – Why? (Reason 1)

So let’s go back a few years…..A� okay 25+A� years!

I was living in England and my best friend lived a few doors up the road.A� Her mother is German and was an amazing baker; gingerbread, almond cookies, fruit cakes, the works.A� Not only would my friend greet me at the door but so would these incredible aromas that wafted down the hallway from the kitchen.

When we reached secondary school, my friends mother became interested (perhaps obsessed is a better word) with healthy eating.A� Overnight, her aromatic, tasty baked wonders turned into sugarless, dry and tasteless shadows of their former selves.

Looking back I am reminded of a science experiment called “Pavlov’s Dog”.A� I would visit my friend and be greeted by the same warm, delicious promise of baking that would make my mouth water and stomach grumble.A� My highly trained auto-responses would be rewarded with a “healthy” cookie that tasted of spiced dirt.A� Perhaps now is a good time to apologise to my brother for making him eat mud pies as a baby?!

My parents have always drilled into me, “be polite”, “don’t be rude”, “say thank you” etc etc. Human instinct (especially that of a 13 year old with a sweet tooth) is to grab that cookie and consume with gusto but biting the head off a sugarless gingerbread man is the same as taking a swig of coffee when you think it’s tea or vice versa.A� Every nerve in your body tells you to spit it out, bleugh!

Such a conundrum!A� AND I never learned.A� Just like Pavlov’s dog I would smell the baking, take the offered cookie and then smile my way through 3 minutes of torture while I tried to eat the damn thing.

My friend’s mother was a pioneer!A� Before Jamie Oliver waged war on school dinners or Irritable Bowel Syndrome became a dinner table conversation topic, she was blazing a trail for others to follow.A� Perhaps not in the way she had hoped but a benchmark is a benchmark.A� Even if it falls into the “I never want my food to taste like that!” category.
